Refried Bean Soup

About the Recipe

A warm comforting soup served with warm tortillas. Perfect for a gross rainy day or cold winter evening. This soup freezes beautifully! Pull out dump in your crock pot and in a few hours on low you'll have a tasty dinner. Fair warning this is a very filling meal!

Ingredients

3 - 14 oz cans refried beans (I used the jalapeno flavored ones)

1 - 14 oz can black beans - drained/rinsed

1 -14 oz can corn kernels - drained.

1 family size can tomato soup condensed (do not add the water)

1 -14 oz can chicken broth

1/2 rotisserie chicken shredded in larger chunks - stirring breaks it down smaller bits. 

1 diced Poblano Chille diced or 1 can of diced chili.

2 cup spicy salsa

1 tbsp black pepper

1 tbsp onion powder

1 tbsp garlic powder

1/4 minced garlic

Crushed red pepper flakes to your heat preference level.

Uncooked flour tortillas (warm till golden bubbly on each side. Costco)


Preparation

  • Dump all ingredients into crock pot and simmer on low for 4-6 hours.

  • Cook up the uncooked tortillas till golden.  About 20-30 seconds per side.

  • Serve and enjoy!

  • Freeze leftovers for a second meal.


Freezer Meal Instructions:

  • Dump all ingredients into a large mixing bowl and mix well.

  • Label with meal name and date.

  • Freeze.

  • Take out the night before use.  

  • Morning of - dump contents into crock pot and simmer on low for 4-6 hours

  • Cook up the flour tortillas. 

  • Serve & Enjoy.
