Egg Quiche - Sheet Pan Style

About the Recipe

A super easy make ahead breakfast thats very versatile in flavor add-ins and freezes really well!

Ingredients

12Eggs

1/2 cup heavy cream

1 can - 14 ounce Black Beans

1 can - 14 ounce Sweet Corn Kernels


Add-in Options:

Ground meat - Sausage / Chorizo

2 Cups Cheese - Pepper jack / Chedder or whatever flavor you prefer.

1 Cup Peppers of choice (Green, yellow, red, spicy - your choice)

Preparation

  1. Crack eggs into a large mixing bowl.

  2. Mix in desired add-ins - Be Creative

  3. Place parchment paper on a sheet pan.

  4. Spray paper with cooking oil or melted butter.

  5. Bake at 325 degrees for 20-30 minutes or till heated through.

  6. Cut into 3x3 or 4x4 inch squares.

  7. Serve with salsa and sour cream.



NOTE:

These can be served as a quiche or even used on breakfast sandwiches.
