About the Recipe

A beautiful and divine homemade chicken stock that makes a rich base to soups and other recipes. This broth is comfort at its best. Chicken noodle soup, chicken pot pie and so many more options!

Ingredients

6 Rotisserie Chicken Carcas, skins and bits.

2 large onions quartered.

2-4 celery stalks or celery seed

Garlic, salt, pepper - lightly

Carrots

Strainer / cheese cloth

Ziploc or vac seal bags


Preparation

  • Remove meat from chickens.

  • Place chicken carcasses into a large electric roaster.   This can be done stove top if you want to babysit the stove. 

  • Add in veggies

  • Simmer on low for about 24 hours.  

  • Strain liquid and discard chicken carcass and bits.

  • Allow to cool. 

  • Bag up in 2 cup portions in Ziploc or vac seal.  

  • Label / Date

  • Freeze.


** Thaw to use in recipes

** Note as stock cools it may resemble a Jello - this is ok and means you have a very collagen rich broth!
