About the Recipe

Apricot Glazed chicken evolved one night when I had forgotten to stop by the store and do the weekly shopping. I'm pretty sure other than the jar of jam and chicken that the fridge crumbs had their own baby crumbs. A box of stovetop stuffing and a bag of frozen peas and a dinner family LOVED was born.

Ingredients

Small portions - 6 Chicken Tenderloins or 2-3 Chicken Breasts cut down into 6 pieces.

Big Appetites - 12 Tenderloins or 6 full Chicken Breasts

1 Small Jar of Apricot Jam Ziploc bags or vac seal bags

Preparation

This meal can be made on the spot for a quick meal or freezer meal.


  1. Freezer Meal: Place chicken into a Ziploc or vac seal bag with enough apricot jam to coat chicken,

  2. Label / date.

  3. To heat - pull out of freezer 1-2 days before use and thaw in fridge. Bake in oven at 350 degrees for about 20-30 minutes till internal temperature is 165.


To Make:

Place Chicken and jam in a baking dish.

Place in oven and bake 350 degrees for about 20-30 minutes or internal temperature is 165.


Pair with desired side dishes.
